I whipped up this easy, delicious dish the other day when I was pressed for time – I had a friend coming over to visit for lunch, and it was 11 AM, and I had nothing. Well, this took less than 30 minutes to make, and Baby Ben loved it too!
An Easy Way to “Health-ify” Any Meal
One thing you should know about me is there is literally nothing I WON’T add spinach to… I had about half a pack of organic baby spinach left in my fridge, and I used it all up for this recipe. Leafy greens always look “excessive” when you’re adding them to the pot while they’re fresh, but don’t be afraid to load up – they wilt and shrink to about 10% of their original size. Adding leafy greens to pastas, stews, soups, and stir-fries is one of the easiest ways to incorporate these very important vegetables into your diet.
My recipe is a simplified version of Catelli’s Pasta with Wild Mushroom + Spinach Recipe. The original also uses Catelli gluten-free penne pasta, and I used Catelli macaroni pasta. Of course, any type of pasta will work!
- 1/4 package Catelli macaroni
- 1 cup sliced white mushrooms
- 2 cups chopped organic baby spinach
- 1 jar Alfredo sauce
Cook macaroni according to package directions. Meanwhile, mix mushrooms, spinach, and Alfredo sauce in a large saucepan and heat until the mushrooms and spinach are cooked. Add hot cooked macaroni, and mix well. Serve immediately.
